*You will need:
°2 cups of all-purpose flour
°salt 1/2 tsp
°1 teaspoon of baking soda
°1 piece of butter (no substitute)
°3/4 cup and 2 tablespoons of dark brown sugar
°1/8 cup of vegetable oil
°2 whole eggs (3 small or medium eggs)
°2 1/2 cups coarsely mashed over a ripe banana (about 5-6 bananas)
+Optional: mini chocolate chips and/or toasted coarsely chopped nuts.
*Directions :
Preheat oven to 350 degrees.
2 cups all-purpose flour 1/2 teaspoon salt 1 teaspoon baking soda set aside.
Then, in a large bowl, cream until fluffy: 1 stick butter (no substitutes) 3/4 cup and 2 tablespoons dark brown sugar
Add: 1/8 cup vegetable oil 2 whole eggs, one at a time Then add: 2 1/2 cups coarsely mashed over a ripe banana (about 5-6 bananas)
Next, slowly add the dry ingredients, don't over mix, but make sure all the dry ingredients are mixed into the wet ingredients.
Line one loaf pan with bam or spread it.
Pour the mixture into the baking tray and bake in the middle of the oven for 55-65 minutes.
This recipe will easily double, but don't try to triple it.
Start a fresh mixture for best results.
You can add 1 cup of the mini chocolate chips at the time you add the dry ingredients, or 1 cup of toasted, coarsely chopped nuts such as pecans or walnuts.
